Roaster's Notes:
These new premium Ethiopian beans from the Yirgacheffe region are big and bold. Using our old roast profiles has yielded a dark coffee with huge notes of dark berry and fruit. As always we are still experimenting to bring out these beans unique character.
The Cup:
Balanced, juicy, sweet, and soft with berry, plum, praline, and floral flavors.
The Region:
As the birthplace of coffee, Ethiopia has a unique relationship with the bean. The plant grows wild in their forests and it was there that it was first harvested and cultivated. As a result, the traditions and culture surrounding coffee are old and deep. More So than in any other part of the world, coffee is part of their heritage.
The Beans:
The Testi Adorsi washing station is located in Yirgacheffe, Ethiopia, and was built in 2000. It serves around 500 smallholder farmers in the area, who deliver their ripe cherry to the Gersi collection point for processing at this washing station. The coffee here is dried on raised beds for 15–18 days.
